On a More Personal Note...

The Zettls arrived last night, and I’ll fill you in soon on how my sessions with Remmer and Walter are going. Today, however, I thought I’d give you an “inside look” at a different aspect of my “preparations”…

Yesterday, I cooked a dinner of Italian sausage over pasta in a white wine, cream and nutmeg sauce for Walter, his lovely wife Heide, Pat and I. Yum :) It is so simple and really delicious. You just gently sauté some onions, add the thick slices of Italian sausage, after a few minutes splash in some wine and let it reduce a little. Then add cream and nutmeg, sea salt and pepper. It's delicious! I served it with a salad of arugula and shaved parmesan. Are you feeling hungry yet?!

I love good food, and cooking is my chill time so it's fun for me to get creative. Sometimes I cook really simple but yummy things on the stove top for Pat and I, but when we have friends over I tend to make things in the oven. For example, tonight I'm going to make Greek Feta Chicken. I'll sauté some onion and garlic, add crushed tomatoes and white wine, simmer for about 5 minutes, then add tomato paste, Kalamata Olives, feta cheese chunks and season it with sea salt and pepper. Then I pour that over chicken thigh filets and put it in a 400 degree oven for about 40 minutes or so. Then I serve it with crusty bread and a simple green leaf salad with vinaigrette dressing. It's simple, delicious, and takes no supervision :)
